- 2 lbs chicken breasts (cubed)
- 2 red bell peppers (chunked)
- 1 pint cherry tomatoes
- 2 zucchinis (sliced)
- 1 large red onion (chunked)
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 2 tablespoons balsamic vinegar
- 1 tablespoon dried oregano
- 2 tsp paprika
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp sugar
- 1 tsp salt
- 1/4 tsp cayenne pepper
- 1/4 tsp black pepper
- Prepare the marinade by mixing olive oil, lemon juice, balsamic vinegar, oregano, garlic powder, paprika, and seasoning in a mixing bowl.
- Add cubed chicken to the marinade and mix well. Cover and refrigerate for at least 30 minutes.
- Preheat your grill or oven.
- Thread marinated chicken and vegetables onto skewers alternately.
- Grill over medium-high heat for 12-15 minutes or bake in an oven at 400°F (200°C) for 15-20 minutes until cooked through.
- Serve warm with tzatziki sauce.
