  • 2 lbs chicken breasts (cubed)
  • 2 red bell peppers (chunked)
  • 1 pint cherry tomatoes
  • 2 zucchinis (sliced)
  • 1 large red onion (chunked)
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon dried oregano
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper

Instructions

  1. Prepare the marinade by mixing olive oil, lemon juice, balsamic vinegar, oregano, garlic powder, paprika, and seasoning in a mixing bowl.
  2. Add cubed chicken to the marinade and mix well. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill or oven.
  4. Thread marinated chicken and vegetables onto skewers alternately.
  5. Grill over medium-high heat for 12-15 minutes or bake in an oven at 400°F (200°C) for 15-20 minutes until cooked through.
  6. Serve warm with tzatziki sauce.
