  • 2 3/4 cups gluten-free all-purpose rice flour blend with xanthan gum
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup very cold unsalted butter (or dairy-free butter)
  • 1/2 cup very cold shortening
  • 2 large eggs
  • 1/2 teaspoon apple cider vinegar
  • 6 tablespoons ice-cold water
  • 16 teaspoons gluten-free seedless strawberry jam
  • 1 cup powdered sugar (for glaze)
  • 1/4 teaspoon pure vanilla extract

Instructions

  1. In a mixing bowl, combine the flour, sugar, and salt. Cut in cold butter and shortening until crumbly.
  2. Whisk eggs, vinegar, and ice water in another bowl; add to the flour mixture until dough forms. Divide into two disks, wrap in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat oven to 375°F (190°C). Roll out one disk of dough on a floured surface to about 1/8-inch thickness; cut into rectangles.
  4. Place half on parchment-lined baking sheets; add about 1 teaspoon of jam on each rectangle. Top with remaining rectangles; seal edges.
  5. Brush tops with an egg wash (egg mixed with water) and bake for about 20 minutes or until golden brown.
  6. Mix powdered sugar with vanilla extract and water for glaze; drizzle over cooled pop tarts.
