  • 1 box of puff pastry dough (2 sheets), thawed
  • 3 tablespoons melted butter, for brushing
  • Sanding sugar
  • 1 8-ounce block of cream cheese
  • 1 tablespoon sour cream
  • 3 tablespoons granulated sugar
  • 2 teaspoons lime juice, freshly squeezed or bottled
  • Lime zest from one whole lime
  • 21/2 teaspoons vanilla extract
  • Fresh blueberries, rinsed and dried
  • Fresh strawberries, stems removed and cut in half
  • Optional garnish: additional lime zest

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Unfold the thawed puff pastry sheets on a lightly-floured board.
  3. Use a large 4.5-inch biscuit cutter to cut out 4 rounds from each sheet.
  4. Lightly score the rounds with a smaller biscuit cutter or drinking glass.
  5. Transfer rounds to baking sheets lined with silicone mats or parchment paper.
  6. In the bowl of a stand mixer, combine cream cheese, sour cream, granulated sugar, lime juice, lime zest, and vanilla extract.
  7. Mix on medium speed until smooth and creamy.
  8. Place two tablespoons of this mixture in the center of each puff pastry circle, spreading it while leaving a 1/4-inch rim.
  9. Arrange blueberries on half of the rounds and artistically place halved strawberries on the remaining rounds.
  10. Bake in preheated oven for 15-16 minutes or until rims are lightly golden brown.
  11. Allow pastries to cool on baking sheets until reaching room temperature.
  12. If desired, sprinkle additional lime zest on top of strawberry pastries before serving.
