  • 2 cups cooked, shredded chicken
  • 1 cup uncooked long grain white rice
  • 1 can (10.5 oz) French onion soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1½ cups shredded Swiss or mozzarella cheese
  • ½ cup milk
  • 1 small onion, thinly sliced
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a skillet over medium heat, melt butter and sauté onions until caramelized (10–12 minutes). Set aside.
  3. In a mixing bowl, combine rice, French onion soup, cream of chicken soup, milk, salt, and pepper.
  4. Fold in shredded chicken and half the cheese until combined.
  5. Pour mixture into prepared baking dish; top with caramelized onions and remaining cheese.
  6. Cover with foil and bake for 45 minutes; remove foil and bake an additional 10–15 minutes until bubbly.
