  • 1 tbsp olive oil
  • 2 lbs chicken thighs and legs
  • salt
  • 4 shallots (diced or one medium onion)
  • 1 rib celery (diced)
  • 45 thyme sprigs
  • 2 cloves garlic (minced)
  • 6 strips of Turkey Bacon (chopped)
  • 2 tbsp apple juice
  • 2 tbsp flour
  • 85 ml/1/3 cup chicken stock
  • 2 apples (peeled, cored and cut into wedges)
  • 125 ml/1/2 cup double cream

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Pat dry the chicken pieces, season with salt, and brown them in olive oil in a large casserole dish.
  3. Cook the Turkey Bacon until crisp, then sauté shallots and celery until soft. Add garlic and deglaze with apple juice.
  4. Create a gravy base with flour and chicken stock, then stir in apple juice and return chicken to the dish.
  5. Cover and bake for 30 minutes; uncover and bake for an additional 30 minutes.
  6. Stir in heavy cream and cook uncovered for another 20 minutes before serving with cooked apple wedges.
