  • 2 medium oranges
  • 150 g almond meal
  • 100 g shelled pistachios (finely ground)
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 170°C (340°F). Line a springform pan's base with parchment paper and grease the sides.
  2. Boil the oranges in water for 60 minutes. Drain, cool, remove seeds, and puree until smooth.
  3. In a bowl, whisk eggs and sugar until pale. Stir in orange puree.
  4. In another bowl, combine almond meal, ground pistachios, baking powder, and salt; fold into the wet mixture until just combined.
  5. Pour into the prepared pan and bake for 50-60 minutes or until a skewer comes out clean.
  6. Cool for 10 minutes in the pan before transferring to a wire rack.
