  • 3/4 cup granulated sugar (for caramel)
  • 1/4 cup water (for caramel)
  • 14 oz can sweetened condensed milk
  • 12 oz can evaporated milk
  • 1 3/4 cups heavy whipping cream
  • 1 1/2 Tbsp vanilla extract
  • 5 large eggs (room temperature)
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat the oven to 350°F. Prepare a kettle of hot water.
  2. In a medium saucepan, mix sugar and water; boil without stirring for about 3-5 minutes until golden. Pour into a non-stick cake pan and set aside.
  3. Blend sweetened condensed milk, evaporated milk, heavy cream, vanilla extract, eggs, and salt on low speed until smooth; strain if desired. Pour over caramel.
  4. Cover the cake pan with aluminum foil and place it in a roasting pan. Fill the roasting pan with hot water halfway up the sides of the cake pan.
  5. Bake for 70-80 minutes until slightly firm in the center. Cool at room temperature before refrigerating for at least 6 hours or overnight.
  6. To serve, run a knife around the edges and invert onto a platter; garnish with fresh berries.
