  • 5 medium red Romano peppers
  • 2 cups crumbled feta cheese
  • 6 tablespoons Greek yogurt
  • ¼ cup chopped fresh dill
  • 3 tablespoons olive oil
  • 2 cloves garlic (grated)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 220 C (420 F) and line a baking pan with parchment paper.
  2. Make a slit on each pepper and brush lightly with olive oil. Roast for 5 minutes until slightly softened.
  3. Remove from the oven, cool for about 10 minutes, and discard seeds using a dessert spoon.
  4. In a mixing bowl, combine feta cheese, Greek yogurt, dill, grated garlic, and olive oil. Adjust salt as needed.
  5. Fill each roasted pepper with the feta mixture.
  6. Return to the oven and bake for another 10 minutes until heated through.
  7. Prepare dressing by whisking together olive oil, grated garlic, and lemon juice; drizzle over stuffed peppers before serving.
