  • 1 cup softened butter
  • 3 large eggs
  • 2 1/2 cups cake flour
  • 1 cup baking cocoa (sifted)
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup instant chocolate pudding mix (small box)
  • 2 1/4 cups buttermilk
  • 1 cup semi-sweet chocolate chips for ganache
  • 1/2 cup water
  • 1 teaspoon vanilla
  • 3 1/2 cups powdered sugar
  • 3 tablespoons heavy cream (more or less for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  3. In another bowl, sift together cake flour, cocoa powder, baking soda, salt, and pudding mix. Gradually add this dry mixture to the wet ingredients while alternating with buttermilk until smooth.
  4. Pour the batter into a greased 9×13 inch baking pan and bake for about 60 minutes or until a toothpick inserted comes out clean. Allow it to cool on a rack before icing.
  5. For the ganache: Melt butter with water in a saucepan over low heat. Stir in chocolate chips until smooth, then mix in vanilla and sifted cocoa powder followed by powdered sugar and heavy cream until desired consistency is achieved.
  6. Once the cake is cooled, pour the ganache over the top and let it set before slicing.
