  • 3/4 cup pineapple juice
  • 1/2 cup coconut aminos
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 1/2 lbs skinless boneless chicken thighs
  • 20 oz can pineapple chunks
  • Sea salt and black pepper to taste

Instructions

  1. In a saucepan, combine pineapple juice, coconut aminos, ketchup, brown sugar, garlic, and ginger. Bring to a boil, then simmer for 10-12 minutes until thickened.
  2. Cut chicken into bite-sized pieces and marinate in the cooled sauce for at least one hour in the refrigerator.
  3. Drain pineapple chunks and cut them into similar sizes as the chicken. Thread chicken and pineapple onto skewers, seasoning with salt and pepper.
  4. Preheat grill to medium-high heat and grill skewers for about 10-12 minutes, turning occasionally and brushing with remaining sauce.
  5. Serve hot with extra sauce on the side.
