  • 3 cups uncooked pasta (rotini, penne, or farfalle)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 1 small red onion (chopped)
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers (chopped)
  • 1 cup halved little tomatoes
  • 5 ounces crumbled feta
  • Salt & pepper (to taste)
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon brown sugar

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and cool under running water.
  2. Combine dressing ingredients in a jar; shake until well mixed.
  3. In a large bowl, mix cooled pasta with chopped vegetables and olives. Pour dressing over salad and toss well.
  4. Serve immediately or refrigerate for about 30 minutes for flavors to meld.
