  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 tsp vanilla
  • 3 large eggs
  • 1 1/4 cup all purpose flour
  • 1/2 cup dutch processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 8 tbsp unsalted butter
  • 3/4 cup brown sugar
  • 1 cup plant-based cream
  • 1 cup milk
  • 200g dark chocolate
  • 1/2 tsp salt
  • Optional: 1-2 tbsp cocoa powder

Instructions

  1. Prepare the dates by soaking chopped Medjool dates in boiling water for 10 minutes.
  2. In a separate bowl, beat softened butter and brown sugar until fluffy, then add eggs one at a time.
  3. Combine dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually mix dry ingredients into wet mixture along with soaked dates and their liquid.
  5. Pour batter into a greased 9×13 inch baking dish and bake at 350°F (175°C) for 25 minutes.
  6. For the toffee sauce, melt butter, brown sugar, plant-based cream, milk, dark chocolate, and salt in a saucepan over medium heat until smooth.
  7. Serve warm pudding topped with generous amounts of toffee sauce.
