  • 5 pounds chuck roast
  • 1/2 large white onion
  • 3 garlic cloves
  • 3 large bay leaves
  • 1/2 tablespoon salt
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 tablespoon cumin
  • 1/2 tablespoon dried oregano
  • 7 ounces chipotle sauce
  • 1 cup beef broth
  • 12 6-inch corn tortillas
  • 3 tablespoons avocado oil
  • 3 cups shredded Monterey Jack cheese
  • 1/2 cup pico de gallo
  • 2 tablespoons cilantro (chopped)
  • 2 small limes (cut into wedges)

Instructions

  1. Place the chuck roast in a slow cooker along with onion, garlic, bay leaves, salt, garlic powder, onion powder, cumin, oregano, chipotle sauce, and beef broth. Stir to combine.
  2. Cover and cook on low heat for about 4 hours or until the beef is fork-tender. Shred the beef using two forks.
  3. Heat a skillet over medium heat with avocado oil. Briefly dip each tortilla in the broth, then fill with shredded beef and cheese before folding.
  4. Fry each taco in the skillet until golden brown on both sides. Serve topped with pico de gallo and cilantro alongside lime wedges.
