Scale
  • 15.25 oz white cake mix
  • 3 egg whites
  • ½ cup vegetable oil
  • ½ cup Greek yogurt
  • ¾ cup whole milk
  • 5.1 oz instant vanilla pudding mix
  • 2 cups heavy cream
  • 3 tbsp granulated sugar
  • Pink, yellow, and blue gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cake mix, egg whites, vegetable oil, Greek yogurt, whole milk, and gel food coloring. Beat until well combined.
  2. Pour the batter into a greased 9×13-inch baking pan and bake for about 25 minutes or until a toothpick comes out clean. Let it cool completely.
  3. In another bowl, whisk together the pudding mix and whole milk until thickened. Once the cake is cool, poke holes throughout its surface using a fork.
  4. Pour the pudding over the cake evenly and spread gently if needed.
  5. Whip heavy cream with sugar until soft peaks form; spread over the pudding layer.
  6. Top with shredded coconut and sprinkles before refrigerating for at least 4 hours.
