  • 1/3 cup granulated sugar
  • 1 tsp salt
  • 1 tbsp active dry yeast
  • 1 cup warm whole milk
  • 1 large egg
  • 1 cup cold unsalted butter (for laminating)
  • 7 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for filling)
  • Zest of 1 lemon (optional)

Instructions

  1. In a bowl, mix flour, sugar, and salt. In another, combine warm milk and yeast; let sit until foamy. Mix both together with the egg to form dough.
  2. Knead on a floured surface for about 6–8 minutes, cover, and chill for 30 minutes.
  3. Prepare a butter block by pounding cold butter between parchment paper into an 8-inch square; chill.
  4. Roll out dough into a square, seal the butter block inside, roll into a rectangle, fold like a letter, and chill again; repeat twice more.
  5. Roll final dough to ¼-inch thick, cut into squares, fill with cream cheese mixture, shape as desired.
  6. Allow to rise on baking sheets while preheating oven to 390°F (200°C). Bake for 15–20 minutes until golden brown.
