  • 8 medium/large croissants
  • 100 g sugar
  • 1/8 tsp salt
  • 1 stick unsalted butter
  • 1 cup almond meal/almond flour
  • 1 tsp almond extract
  • 2 large eggs
  • 1 tsp lemon zest (optional)
  • 2 tbsp sugar
  • 1 tbsp water
  • 3 tbsp sliced almonds
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond meal, sugar, salt, and softened butter until smooth. Add almond extract and mix well. Incorporate eggs one at a time until fully combined. Optionally fold in lemon zest.
  3. Slice each croissant open along one side and fill generously with the almond cream mixture. Place on the prepared baking sheet.
  4. Bake for about 15 minutes until golden brown.
  5. Mix sugar and water to create a glaze; brush it over warm croissants and sprinkle with sliced almonds. Dust with powdered sugar before serving.
