  • 1/4 medium Red Onion (finely diced)
  • 1 cup Pecans (can substitute with walnuts)
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Red apple vinegar (can substitute with apple cider vinegar)
  • 1 tablespoon Lemon Juice (fresh is best)
  • 3 tablespoons Tahini (can substitute with Greek yogurt)
  • 1 teaspoon Dijon Mustard (can substitute with whole grain mustard)
  • 1/2 teaspoon Garlic Powder (or fresh minced garlic)
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Sea Salt (to taste)

Instructions

  1. 1. Preheat oven to 350°F (175°C). In a bowl, coat pecans with maple syrup and spread on a baking sheet. Bake for 8–10 minutes until golden.
  2. 2. Chop celery into bite-sized pieces, dice the apple, and finely chop red onion.
  3. 3. For dressing, whisk together vinegar, lemon juice, tahini, Dijon mustard, garlic powder, onion powder, and salt until smooth.
  4. 4. In a mixing bowl, combine chopped celery, diced apple, cranberries, and onion. Drizzle with dressing and toss gently.
