For the Cake:
2 1/2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened black cocoa powder
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
1/2 cup unsalted butter, melted
3 large eggs
2 teaspoons vanilla extract
1/2 cup blackberry puree
1 cup hot coffee
Black gel food coloring (optional)

For the Blackberry Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/3 cup blackberry puree, strained
8 ounces cream cheese, softened
1 teaspoon vanilla extract

For Decoration:
Fresh blackberries
Dark chocolate shavings
Edible black glitter or sugar
Fresh flowers or dried roses (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, black cocoa powder, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, vegetable oil, melted butter, eggs, vanilla extract, and blackberry puree until smooth.
  • Gradually combine the wet ingredients with the dry ingredients.
  • Slowly pour in the hot coffee and stir until the batter is smooth. Add black food coloring if using.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  • For the frosting, beat the butter and cream cheese together until creamy.
  • Gradually add the powdered sugar and continue beating until fluffy.
  • Mix in the strained blackberry puree and vanilla extract until smooth and lightly purple in color.
  • Level the cake layers if needed, then spread frosting between each layer.
  • Frost the outside of the cake smoothly or create textured swirls for a gothic look.
  • Decorate with fresh blackberries, chocolate shavings, edible glitter, and optional dried roses.
  • Chill the cake for at least 30 minutes before slicing and serving.
