  • 1 cup shredded carrots
  • 1 medium red bell pepper, diced
  • 2 cups red cabbage, thinly sliced
  • 1 bunch green onions, chopped
  • 3 tablespoons tahini
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey or maple syrup
  • 1 pinch red pepper flakes
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • Chopped peanuts (optional)
  • Fresh cilantro or parsley (optional)
  • Sesame seeds (optional)

Instructions

  1. Prepare your vegetables by rinsing and draining the chickpeas. Slice the red cabbage and green onions, shred the carrots, and dice the red bell pepper.
