Ingredients

  • Turkey bacon (or chicken)
  • Yellow onion
  • Carrots
  • Celery
  • Garlic
  • Crushed tomatoes
  • Cannellini beans
  • Low sodium chicken broth
  • Ditalini pasta
  • Parmesan Reggiano

Instructions

  1. In a large skillet over medium heat, cook turkey bacon until crispy. Drain excess fat, slice finely, and transfer to the slow cooker.
  2. Add diced onions, sliced carrots, diced celery, minced garlic, crushed tomatoes, cannellini beans, salt, pepper, thyme, basil, parsley, tomato paste, chicken broth, and water to the slow cooker. Stir well to combine.
  3. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  4. About 30 minutes before serving, stir in uncooked ditalini pasta.
  5. Once cooked, serve hot topped with grated Parmesan Reggiano.
