  • 2 pounds mixed baby potatoes, halved or quartered if large
  • 1 lemon, quartered
  • 4 cloves garlic, smashed
  • 1/4 cup fresh oregano, chopped
  • 1/4 cup extra virgin olive oil
  • Kosher salt and black pepper
  • 1/3 cup extra virgin olive oil
  • 1/2 cup mixed chopped herbs, basil, dill, or parsley
  • 2 teaspoons honey
  • 12 tablespoons sesame seeds
  • Chili flakes
  • 8 ounces feta cheese
  • 3 ounces cream cheese, at room temperature
  • 24 tablespoons lemon juice
  • 1/4 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 425°F.
  2. Toss halved baby potatoes, quartered lemons, smashed garlic, and chopped oregano on a baking sheet with olive oil, salt, and pepper.
  3. Roast for 20 minutes; then remove charred lemons and garlic and return the pan for another 20-25 minutes until crispy.
  4. For the herb oil: Mash roasted garlic with lemon and mix with olive oil, chopped herbs, honey, salt, pepper, and chili flakes.
  5. Blend feta cheese with cream cheese and lemon juice until creamy.
  6. Serve the crispy potatoes topped with herb oil over a swirl of creamy feta sauce.
