  • 1 large red apple (Pink Lady, Fuji, Honeycrisp)
  • 6 celery stalks
  • ¼ cup dried cranberries
  • ¼ cup pecans
  • 3 tablespoons shaved Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 2 tablespoons pure maple syrup
  • 2 tablespoons red apple vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Make the vinaigrette by combining Dijon mustard, maple syrup, red apple vinegar, olive oil, salt, and pepper in a jar. Shake well and set aside.
  2. Toast pecans in a dry skillet over medium heat until fragrant (3–4 minutes). Let cool.
  3. In a large bowl, mix sliced celery, chopped apple, dried cranberries, and toasted pecans. Season with salt and pepper.
  4. Drizzle the vinaigrette over the salad and toss gently to coat.
  5. Serve immediately topped with remaining pecans and shaved Parmesan.
