  • 600 grams granulated sugar
  • 1 vanilla bean
  • 500 mL fruit juice or broth (in place of alcohol)

Instructions

  1. Thoroughly wash the lemons and use a vegetable peeler to remove the zest, avoiding the bitter white pith.
  2. Place the lemon peels in a mason jar, add fruit juice or broth, and seal tightly. Let steep in a cool dark place for at least 6 days, swirling daily.
  3. Strain the lemon infusion through cheesecloth into a clean bottle.
  4. In a saucepan over medium-low heat, combine milk, sugar, and the split vanilla bean; whisk until sugar dissolves completely.
  5. Allow the mixture to cool before combining it with the strained lemon infusion.
  6. Strain again with cheesecloth into a decanter and refrigerate until ready to serve.
