  • 2 tablespoons olive oil
  • 1 large onion (chopped)
  • 3 garlic cloves (peeled and crushed)
  • 2 lbs fresh celery (cleaned and chopped)
  • 1 quart chicken or vegetable stock
  • 1 lb potatoes (peeled and quartered)
  • Fresh parsley (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and cook for another minute.
  2. Stir in chopped celery and quartered potatoes until well coated.
  3. Pour in the chicken or vegetable stock, bring to a boil, then reduce heat to low. Cover and simmer for about 20 minutes until vegetables are tender.
  4. Blend the soup using an immersion blender until smooth or cool slightly and blend in batches if using a traditional blender.
  5. Return to low heat, stir in chopped parsley, season with salt and pepper to taste, and serve hot.
