  • 1 tablespoon olive oil
  • 30 g unsalted butter
  • 450 g chicken breast fillets
  • 1 medium shallot
  • 2 large garlic cloves
  • 1 tablespoon tomato paste
  • 250 ml chicken stock
  • 150 g light cream cheese
  • 2 tablespoons buffalo wing sauce
  • 2 tablespoons ranch dressing
  • 100 g grated cheddar cheese
  • 100 g grated Monterey Jack cheese

Instructions

  1. Cook the pasta according to package instructions, reducing cooking time by one minute for al dente texture. Reserve one cup of pasta water before draining.
  2. In a large pan or Dutch oven, heat olive oil and butter over medium heat. Add chicken pieces and cook for about 6–7 minutes until fully cooked.
  3. Stir in diced shallot and minced garlic; sauté for another 1–2 minutes until fragrant. Add tomato paste and chicken stock; bring to a simmer.
  4. Lower the heat and mix in the light cream cheese until completely melted, simmering gently for about 1–2 minutes.
  5. Stir in buffalo wing sauce and ranch dressing, then add drained pasta. If too thick, incorporate reserved pasta water until desired consistency is reached.
  6. Fold in both cheeses until fully melted; season with salt and pepper to taste before serving.
