  • 1 package (14 or 16 oz.) broccoli florets
  • 1 cup shredded mild or medium cheddar cheese, divided
  • 1 can (10 3/4 oz.) cream of mushroom soup
  • 1/4 cup mayonnaise
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1/8 teaspoon salt
  • 1 1/2 cups Ritz and/or Keebler Club cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. Thaw and drain the broccoli florets thoroughly.
  2. In a mixing bowl, combine the thawed broccoli, 1/2 cup cheddar cheese, cream of mushroom soup, mayonnaise, milk, beaten egg, and salt. Mix well.
  3. Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese.
  4. In another bowl, mix cracker crumbs with melted butter until moistened; sprinkle over the casserole.
  5. Bake in a preheated oven at 350°F for about 45-50 minutes or until bubbly and golden brown.
