  • 1.5 lbs small potatoes (gold or red-skinned)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red apple vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp grainy mustard
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
  • 4 tbsp fresh dill, chopped
  • 1 shallot, peeled and diced
  • 56 cornichons (or dill pickles), diced
  • 1 tbsp cornichon juice

Instructions

  1. Cook the Potatoes: Halve or quarter the potatoes and boil in salted water for about 15 minutes until tender but firm. Drain and rinse under cold water.
  2. Prepare the Vinaigrette: In a mixing bowl, whisk together olive oil, vinegar, salt, pepper, Dijon mustard, and grainy mustard. Add dill, shallots, cornichons, and their juice.
  3. Combine Potatoes with Vinaigrette: Toss warm potatoes into the vinaigrette until evenly coated. Adjust seasoning to taste.
