  • 2 cups grated carrots
  • 16 oz full fat cream cheese
  • 1/2 cup unsalted butter
  • 1/2 tsp salt
  • 5 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans with nonstick spray.
  2. In one bowl, whisk together flour, baking powder, baking soda, salt, and spices. In another bowl, mix melted coconut oil, sugar, eggs, buttermilk, and vanilla until smooth.
  3. Combine both mixtures gently and fold in grated carrots.
  4. Divide the batter between the prepared pans and bake for 26 to 28 minutes or until a toothpick comes out clean.
  5. For the frosting, beat cream cheese and butter until creamy; add salt and vanilla before gradually mixing in powdered sugar.
