Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, granulated sugar, and vanilla until smooth. Freeze for 30 minutes.
  2. In another bowl, cream together butter and sugars until fluffy. Add eggs and vanilla.
  3. In a separate bowl, whisk flour, baking soda, baking powder, and salt; gradually mix into wet ingredients to form dough.
  4. Assemble cookies by flattening dough balls, placing cheesecake filling in the center, and sealing them.
  5. Coat each cookie ball in a mixture of granulated sugar and cinnamon.
