  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 large eggs
  • ½ cup dark vanilla extract (alcohol-free) or apple juice
  • ¼ cup orange juice

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, beat softened butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract, honey, orange juice, zest, apple juice (or dark vanilla), dried fruits (apricots, cranberries), raisins, walnuts, and milk until fully combined.
  5. Gradually add the dry mixture into the wet mixture until just combined; avoid overmixing.
  6. Pour batter into prepared pan and bake for approximately 55-65 minutes or until golden brown and cooked through.
  7. Allow cooling for about 10 minutes before transferring to a wire rack. Glaze with melted apricot jam mixed with water.
