  • 1 cup cold whole milk
  • 2 ¼ tsp active dry yeast
  • ¼ cup granulated sugar
  • 1 tsp fine sea salt
  • 3 tbsp unsalted butter (softened)
  • 1 cup European-style butter (cold)
  • 8 oz dark chocolate bars (chopped)

Instructions

  1. In a mixing bowl, combine bread flour, sugar, salt, and yeast.
  2. Add cold milk and softened butter to form a shaggy dough. Knead until smooth, then chill for at least 2 hours.
  3. Prepare a butter block by pounding cold European-style butter into a rectangle.
  4. Encapsulate the butter in the chilled dough and roll into a rectangle. Fold and chill; repeat this process two more times.
  5. Cut out triangles from rolled dough and place chopped chocolate at the base; roll tightly.
  6. Allow croissants to proof until puffy, then bake at 400°F for 18–22 minutes until golden brown.
