  • 1/4 cup water
  • 1/4 teaspoon almond extract
  • 1/2 cup softened salted butter
  • 1/2 cup granulated sugar
  • 1 1/2 cups almond flour
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 tablespoons whole milk
  • 6 day-old croissants
  • 9 ounces dark chocolate (chopped)
  • 1/4 cup sliced almonds
  • powdered sugar (for dusting)

Instructions

  1. Prepare the syrup by combining sugar and water in a saucepan over medium heat. Stir until dissolved, then remove from heat and stir in almond extract.
  2. In a mixing bowl, beat softened butter and granulated sugar until creamy. Add almond flour, egg, vanilla extract, and almond extract; mix until well combined.
  3. Preheat the oven to 375°F (190°C). Slice each croissant in half lengthwise and brush the insides with the syrup. Spread a layer of the filling inside each croissant.
  4. Add chopped dark chocolate on top of the filling and sprinkle sliced almonds over it.
  5. Place filled croissants on a parchment-lined baking sheet and bake for about 15 minutes or until golden brown.
  6. Allow them to cool slightly before dusting with powdered sugar.
