  • ¼ cup fresh lime juice (about 23 large limes)
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon kosher salt
  • 1 tablespoon sugar
  • 4 boneless, skinless chicken breast halves (cut into 1-inch cubes)
  • 34 ripe but firm large mangoes (peeled and cut into 1 1/2-inch cubes)

Instructions

  1. Soak bamboo or wooden skewers in water for 20-30 minutes.
  2. In a large mixing bowl, whisk together olive oil, lime juice, lime zest, chili powder, cayenne pepper, kosher salt, and sugar.
  3. Add cubed chicken and mango to the marinade; mix gently until evenly coated. Refrigerate for 2-4 hours.
  4. Preheat your grill or grill pan to medium heat. Thread marinated chicken and mango onto the soaked skewers.
  5. Grill skewers for 6-10 minutes, turning frequently until chicken is charred and reaches an internal temperature of 165°F.
