  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts
  • 8 oz mushrooms
  • 2 cloves garlic
  • ½ cup chicken broth
  • ½ cup Marsala apple vinegar (or additional chicken broth)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken pieces with salt and pepper, then cook until golden brown (5-7 minutes). Remove and set aside.
  3. In the same skillet, add sliced mushrooms and cook until browned (about 5 minutes). Stir in minced garlic for another minute.
  4. Pour in chicken broth and Marsala apple vinegar; bring to a simmer. Add heavy cream, Parmesan cheese, thyme, salt, and pepper; simmer until thickened.
  5. Return chicken to the skillet along with drained pasta; toss until coated in sauce.
  6. Garnish with freshly chopped parsley before serving.
