  • 1 cup flour
  • 2 large eggs (lightly beaten)
  • 2 cups panko bread crumbs
  • vegetable oil (for frying)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 medium carrot (sliced)
  • 1 medium potato (cubed)
  • 2 cups chicken stock
  • 1 tablespoon honey
  • 2 tablespoons soy sauce
  • curry roux (as needed)
  • U.S.-grown medium-grain rice (cooked according to package instructions)

Instructions

  1. Prepare the chicken by slicing it horizontally, then pound until approximately ½ inch thick. Season with salt and pepper.
  2. Set up three shallow dishes for the breading process: flour in one, beaten eggs in another, and panko breadcrumbs in the last. Dip each piece of chicken into flour, egg, and then panko.
  3. Heat vegetable oil in a deep pan to about 340°F (170°C). Fry each piece of breaded chicken for about 6-7 minutes or until golden brown. Drain on a wire rack.
  4. For the curry sauce, sauté onion and garlic in olive oil until translucent. Add carrot and potato; cook until slightly softened.
  5. Pour in chicken stock, honey, soy sauce, and bring to a boil. Reduce heat to simmer until vegetables are tender.
  6. Stir in curry roux until dissolved; simmer for an additional 10 minutes until thickened.
  7. Serve sliced chicken katsu over cooked rice topped with warm curry sauce.
