  • 2 cups white rice
  • 1 large onion
  • 2 cups low-sodium chicken broth
  • 2 (10.5 oz) cans cream of mushroom soup
  • Kosher salt
  • Black pepper
  • 4 large bone-in, skin-on chicken thighs
  • 2 tablespoons melted butter
  • Fresh thyme
  • 1 clove garlic

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9"x13" baking dish with olive oil.
  2. In the baking dish, combine rinsed rice, chopped onion, chicken broth, and cream of mushroom soup. Stir well and season with salt and pepper.
  3. Place chicken thighs skin side up on top of the mixture, brush with melted butter, and sprinkle thyme and minced garlic over them. Season again with salt and pepper.
  4. Cover the dish with foil and bake for 1 hour. Afterward, uncover and bake for an additional 30 minutes until the rice is tender and chicken is cooked through.
  5. Broil on high for an extra 3 to 5 minutes to achieve golden brown skin. Garnish with chopped parsley before serving.
