  • 2 Tbsp avocado oil
  • 1 cup diced boneless skinless chicken breasts
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 tsp minced fresh ginger
  • 1 cup fresh pineapple chunks
  • 3/4 cup frozen peas and carrots (thawed)
  • 3 cups cooked jasmine rice (preferably day-old)
  • 2 Tbsp reduced sodium soy sauce
  • 2 green onions (diced)

Instructions

  1. Prepare all ingredients by dicing the chicken, onion, green onions, and pineapple. Mince the garlic and ginger.
  2. Heat 1 tablespoon of avocado oil in a wok or large skillet over medium-high heat. Add the chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove from the pan.
  3. In the same pan, add another tablespoon of avocado oil. Sauté onion, garlic, and ginger for about 2-3 minutes.
  4. Return the chicken to the pan along with pineapple chunks and thawed peas and carrots. Stir together for another 2-3 minutes.
  5. Add cooked jasmine rice along with soy sauce. Mix well until heated through.
  6. Garnish with diced green onions before serving hot.
