  • 1 cup chopped cilantro
  • 1 cup chopped parsley
  • 1 serrano pepper (chopped, optional)
  • 1 shallot (chopped)
  • 6 cloves garlic
  • Juice from 1 lemon
  • ½ cup extra virgin olive oil (up to 1 cup as desired)
  • 1 tablespoon cayenne powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • Salt to taste

Instructions

  1. Prepare all your ingredients by washing and chopping the herbs, shallot, and serrano pepper if using.
  2. For chunky Chermoula: Combine all ingredients in a large mixing bowl and mix by hand to your preferred texture.
  3. For smooth Chermoula: Place all ingredients except olive oil in a food processor or blender. Blend until combined, scrape down sides, then slowly drizzle in olive oil while blending until smooth.
  4. Serve immediately as a marinade or sauce. Store leftovers in an airtight container in the refrigerator for up to one week.
