  • 1/4 cup all-purpose flour (or cornstarch)
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream (or half and half)
  • 1 cup matchstick carrots
  • 1 1/2 cups uncooked macaroni noodles
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent (about 3–4 minutes). Stir in minced garlic and cook for another minute.
  2. Add ground beef to the pot and cook until browned, breaking apart with a spatula. Drain excess fat if necessary.
  3. Sprinkle flour over the mixture and stir for about 2 minutes to eliminate raw flour taste.
  4. Gradually pour in chicken broth while stirring continuously, then add heavy cream and mix well.
  5. Season with salt, pepper, onion powder, Italian seasoning, and paprika according to taste.
  6. Incorporate matchstick carrots and uncooked macaroni; bring to a boil. Once boiling, reduce heat and simmer uncovered for about 10–12 minutes until pasta is tender.
  7. Remove from heat and stir in shredded cheddar and Parmesan cheese until melted.
