  • 23 stalks celery
  • 1 small bulb fennel
  • 1 green apple
  • ¼ cup parsley
  • ½ cup walnuts
  • 3 tablespoons parmesan cheese
  • pinch kosher salt
  • few turns cracked black pepper
  • ¼ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey

Instructions

  1. Wash and slice celery on a diagonal. Thinly slice fennel using a mandoline, and core and slice the green apple.
  2. Toast walnuts in a dry skillet over medium heat for about 5 minutes until golden brown.
  3. In a mixing bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper until blended.
