  • 1 Granny Smith apple (cubed)
  • ¼ red onion (finely chopped)
  • 25 g walnuts (chopped)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon mustard powder
  • Pinch salt

Instructions

  1. Soak the chopped red onion in cold water for 10 minutes to mellow its sharpness.
  2. Toast the walnuts in a dry frying pan over medium heat for about 2-3 minutes until fragrant. Allow them to cool.
  3. In a small bowl, whisk together tahini, lemon juice, garlic powder, mustard powder, and salt; gradually add water until desired consistency is reached.
  4. Drain and rinse the soaked onions; pat dry.
  5. Chop celery and cube apples while keeping the skin on.
  6. In a large mixing bowl, combine celery, apple cubes, rinsed onions, parsley, toasted walnuts, and drizzle with dressing. Toss well.
  7. Serve immediately for maximum freshness.
