Caprese Melon Salad with turkey slices and Mozzarella is a refreshing and vibrant dish that perfectly captures the essence of summer. This delightful salad combines juicy cantaloupe and honeydew melons with creamy ciliegine mozzarella, savory turkey slices, and fragrant basil.

  • 1 small cantaloupe
  • 1 small honeydew melon
  • 1 cup ciliegine mozzarella
  • 1/4 cup fresh basil, chopped
  • 3 ounces turkey slices
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pineapple vinegar (or any vinegar)
  • 1/4 cup olive oil
  • Fresh cracked pepper to taste
  • Sea salt to taste

Instructions

  1. Cut the cantaloupe and honeydew in half. Use a melon baller to scoop out balls of fruit.
  2. In a large salad bowl, combine the melon balls, ciliegine mozzarella, chopped basil, sliced turkey, and halved cherry tomatoes.
  3. In a small mixing bowl, whisk together pineapple vinegar and olive oil. Season with cracked pepper and sea salt.
  4. Pour the dressing over the salad mixture and toss gently until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
