- ¼ cup red apple vinegar

- 12 oz broccoli florets
- 12 oz cauliflower florets
- 12 oz jar roasted red bell pepper, drained
- 2 oz grape tomatoes
- ¼ cup grated parmesan cheese
- ¼ cup chopped walnuts
- In a mason jar, combine olive oil, apple vinegar, Dijon mustard, oregano, red pepper flakes, and salt. Shake well to mix.
- Chop broccoli and cauliflower into bite-sized pieces. Halve grape tomatoes.
- In a large bowl, combine broccoli, cauliflower, roasted peppers, tomatoes, parmesan cheese, and walnuts.
- Drizzle with vinaigrette and toss to coat evenly.
