  • ¼ cup red apple vinegar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes
  • Pinch of salt
  • 12 oz broccoli florets
  • 12 oz cauliflower florets
  • 12 oz jar roasted red bell pepper, drained
  • 2 oz grape tomatoes
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped walnuts

Instructions

  1. In a mason jar, combine olive oil, apple vinegar, Dijon mustard, oregano, red pepper flakes, and salt. Shake well to mix.
  2. Chop broccoli and cauliflower into bite-sized pieces. Halve grape tomatoes.
  3. In a large bowl, combine broccoli, cauliflower, roasted peppers, tomatoes, parmesan cheese, and walnuts.
  4. Drizzle with vinaigrette and toss to coat evenly.
