  • 2 large russet potatoes
  • 2 teaspoons canola oil
  • 1 teaspoon kosher salt
  • 2 tablespoons butter
  • ¼ cup heavy cream
  • 4 slices turkey bacon (cooked and crumbled)
  • ½ cup shredded cheddar cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 4 large eggs
  • Chives for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prick potatoes with a fork, coat with canola oil and sprinkle with kosher salt.
  3. Bake for about 1 hour until fork-tender.
  4. Slice baked potatoes in half lengthwise and scoop out most of the flesh into a mixing bowl.
  5. Combine scooped potato flesh with butter, heavy cream, half the turkey bacon, cheddar cheese, garlic powder, onion powder, black pepper, and additional salt until smooth.
  6. Fill potato skins with the mixture and create wells for the eggs.
  7. Crack an egg into each well and top with remaining turkey bacon.
  8. Bake again for 15-20 minutes until eggs are set to your liking.
  9. Garnish with minced chives before serving.
