  • 1 cup light cream or half & half
  • 3 egg yolks, at room temperature
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • Pinch of salt
  • 2 tablespoons butter, cubed
  • 1 1/2 teaspoons vanilla extract
  • 34 (5×4-inch) croissants
  • 34 tablespoons chopped nuts (almonds, pecans, or walnuts)
  • 3 ounces semi-sweet or bittersweet chocolate bar, chopped into small chunks
  • 1/4 cup light cream or half & half (for ganache)
  • 1 tablespoon light corn syrup (optional)

Instructions

  1. In a saucepan, whisk together sugar, cornstarch, and salt. Add egg yolks and whisk until pale. Gradually whisk in light cream and cook over medium heat until thickened and boiling gently for about 1 minute. Remove from heat and stir in butter and vanilla. Cool completely.
  2. Slice each croissant horizontally to create a pocket. Fill generously with the chilled pastry cream.
  3. For the ganache, melt chopped chocolate with half & half over simmering water until smooth.
  4. Spoon ganache over filled croissants and sprinkle with chopped nuts.
  5. Let set at room temperature for about 15-20 minutes.
