  • 1/4 cup fresh parsley (minced)
  • 1 1/2 tablespoons lemon peel (fresh grated)
  • 2 teaspoons dried thyme (crumbled)
  • 6 juniper berries (crushed)
  • 3 cloves garlic
  • 1/2 teaspoon fresh ground black pepper
  • 24 drops Tabasco sauce
  • 1/2 cup olive oil
  • 1/8 cup fresh lemon juice

Instructions

  1. Prepare the seasoning blend by combining parsley, lemon peel, thyme, juniper berries, garlic, black pepper, and Tabasco in a blender. Drizzle in olive oil while blending until smooth.
  2. Generously rub the seasoning mixture over the roast and refrigerate for at least 24 hours.
  3. Bring the roast to room temperature before preheating your oven to 500°F.
  4. Place the roast in a roasting pan and cook at 500°F for 15 minutes before reducing the temperature to 350°F.
  5. Use a meat thermometer to check for an internal temperature of 135°F for medium rare.
