  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper, diced
  • Green onions and sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook for 6 to 8 minutes until golden brown; remove from pan.
  3. Sauté minced garlic in the same pan for about 30 seconds.
  4. Stir in soy sauce, pineapple juice, honey, and vinegar; simmer for 2 minutes.
  5. Whisk cornstarch with water and add to the sauce; simmer until thickened.
  6. Return chicken to the pan with pineapple chunks and bell pepper; cook for another 3 to 4 minutes.
  7. Stir in cooked rice until heated through.
