  • 2 pounds boneless skinless chicken breasts
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper
  • 1 sweet onion
  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 3 cloves garlic
  • 1 tablespoon freshly grated ginger
  • Canola oil, salt, and pepper

Instructions

  1. In a medium bowl, mix together the barbecue sauce, teriyaki sauce, minced garlic, and ginger. Reserve half a cup of marinade.
  2. Place chicken in a large Ziploc bag or bowl. Add the remaining marinade, seal the bag, and marinate for at least 2 hours or up to overnight.
  3. Preheat grill to medium heat. Thread marinated chicken, pineapple chunks, bell pepper pieces, and onion onto skewers.
  4. Brush kabobs lightly with canola oil and season with salt and pepper.
  5. Grill skewers for about 10 minutes while turning occasionally until chicken reaches an internal temperature of 165°F. Brush with reserved marinade during the last few minutes of grilling.
