  • 500g Carrots
  • 100g Puy Lentils
  • 2 tbsp Balsamic Vinegar
  • 3 tbsp Olive Oil
  • 400g Vegan Yogurt
  • 20g Tahini
  • 1 Orange
  • 2 tbsp Maple Syrup
  • 1 tsp Ground Cumin
  • 4 Sprig Thyme
  • 30g Pecans (to serve)
  • 25g Fresh Herbs (to serve)

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Cook the lentils in boiling water for about 25 minutes until tender, then drain.
  3. Spread lentils on a baking tray, season with cumin, salt, pepper, and olive oil; bake for 25 minutes until crispy.
  4. Prepare carrots by cutting into sticks, seasoning with olive oil, salt, and pepper; roast for 20 minutes.
  5. Combine balsamic vinegar, olive oil, and maple syrup; drizzle over carrots after initial roasting time, toss gently with thyme sprigs, then return to oven for another 15-20 minutes.
  6. Mix vegan yogurt with tahini and orange juice; adjust seasoning.
  7. Toast pecans in the oven for about 8 minutes.
  8. Serve by layering whipped yogurt, followed by crispy lentils and roasted carrots; top with pecans and fresh herbs.
