  • 10 cups water
  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), divided into whites and greens
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 8 oz dried ramen noodles or dried curly noodles
  • 1 cup carrot, cut into thin matchsticks

Instructions

  1. In a large pot over medium heat, add chicken thighs, garlic, ginger, scallion whites, salt, and pepper. Pour in the water and bring to a boil. Reduce heat to low and simmer for about 15 minutes until chicken is cooked.
  2. Remove the chicken from the pot and shred once cooled slightly. Add noodles and carrot matchsticks to the broth and cook according to noodle package instructions.
